This task always correspond to a master hamcutter or master carver, as a professional ham cutter, a «sculptor» or «carver» who specializes in cutting the whole ham or shoulder from start to finish, shaping it and getting the most out of it. His cutting technique is an art in achieving the perfect slices so that our palates enjoy each bite to the fullest. It is important to emphasize that the cut must be made with the right tools.
Iberico (or Iberian) ham is a mouth-wateringly delicious cured Spanish ham known for its nutty flavour and creamy stripes of fat that run through it. The combination of the purity of the 100% Iberian breed, the age (which is practically double the usual) and a diet based on acorns during two long “montaneras”, results in a unique meat quality and infiltrated fat.
This is the basis for the production of the best Iberian hams.
