What is extra virgin olive oil? How it´s made?

The extra virgin olive oil produced, traded, exported, imported and distributed by ILOVEACEITE in the US is obtained from the fruit of the olive tree called olive (aceituna in Spanish).
ILOVEACEITE produces 100% extra virgin olive oil from 'picual' and 'royal' varities. There are over 200 varieties of olives in Spain and more than 2.000 in the world.
These are collected by mechanical means to ensure that no deterioration of the oil occurs during its production. Our process ensures that the oil retains the full flavor, aroma and characteristics of the fruit from which it derives.
Extra virgin olive oil is 100% olive juice because its extraction only involves physical processes (picking, grinding/milling, spin/centrifugation) at low temperature. After it, we filtered and bottled.


Characteristically the extra virgin olive oil (called #evoo) is of a green colour with an intense, fruity aroma of fresh green grass.
The oil maintains its complete content of nutrients, vitamins, polyphenol-antioxidants, tocopherols, etc. and above all its smell and taste.
The extra virgin olive oil, produced under the Designation of Origin "Sierra de Cazorla" is of the 'Picual' and 'Royal' variety.
